Rainy Day Brownie Recipe

Calling all chocoholics – this one’s for you! We all need a little bit of TLC, family time and sweet treats to keep our spirits high during lockdown. That’s why we’ve brought you the best brownie recipe ever, which combines all three, courtesy of our Parent Approved Panelist Hollie. This will give you that all important quality time with your little ones, help you de-stress and take your mind off of any anxieties you may be having.

The best part, with lockdown measures relaxing – this would be the perfect opportunity to bake some sweet treats for family and friends and spread the gooey, chocolatey love!


Ingredients

180g butter
100g dark chocolate
80g milk chocolate
80g plain flour
220g caster sugar
30g cocoa powder
3 eggs
White chocolate chunks
Milk chocolate chunks

How to:

Preheat the oven to 180C.

Step 1
Measure out all of the ingredients. Now set a heat proof bowl on top of a pan of hot water and add the butter, 100g dark chocolate and 80g milk chocolate. Melt it all together and ensure it doesn’t stick or burn by stirring continuously.

Step 2
Use a stand mixer with the whisk attachment, an electric hand whisk or some good old elbow grease to mix together the eggs and sugar for two minutes or until creamy and fluffy.

Step 3
Gently fold the melted chocolate into the eggs and sugar mix using either a wooden spoon or rubber spatula. Be careful not to overwork.

Step 4
Next sift in the flower and cocoa powder and combine using a wooden spoon or the paddle attachment on your mixer. If you’re doing this by hand stir in a figure of eight motion to combine the ingredients well without losing much of the airiness in the mix.

Step 5
Finally add in the chunks of white and milk chocolate and pour your mix into a brownie tin lined with butter and then baking paper. Leave the brownie as is or go wild and top it off with your favourite chocolate treats or biscuits.

Bake at 180C for 35-40 minutes.
